Chopped Cucumber Salad

Fresh and easy to make with any spring or summer main dish. This salad can honestly have any chopped veggie mixed in!

Yields 4-5 servings (great leftover!)

Ingredients: 

  • 2 cucumbers

  • 2 medium tomatoes

  • 1/2 onion

  • ¼ cup kalamon olives

  • 1/8 cup of dill fresh chopped OR dried

  • 1 Tablespoon of Lemon juice

  • ¼ cup plain Greek yogurt

  • 1 Tablespoon red wine vinegar

  • ¾ tsp of salt

  • ½ tsp of pepper

Directions:

  1. Peel and cut the cucumbers, cutting them into ½ wedges, I personally prefer leaving the seeds but that’s up to your preference.

  2. Roughly chop the tomatoes and onions and mix all the vegetables together. Slice each of the olives down the middle and toss into the mix.

  3. Chop fresh dill and toss in with the vegetables, mix to evenly disperse the herbs. Pour in yogurt, vinegar, lemon, salt & pepper and mix until each vegetable is coated.

  4. Add any additional spices or lemon to taste and enjoy! Great alongside a burger, steak or any Mediterranean dish.
