Grilled Hawaiian Chicken Skewers

These are a great healthy meal option for a quick grill or leftover veggies. Throw anything onto the skewer with some chicken and it tastes awesome. I would typically serve this with some rice or a big salad. Leftovers taste great re-heated OR highly recommend dropping them into a pita pocket.

Yields: 8 skewers, 3 portions

Ingredients

  • 8-10 metal or wood skewers

  • 2 boneless skinless chicken breasts cut into 1 inch pieces

  • 1/4 cup brown sugar

  • 1/4 cup soy sauce

  • ¼ cup pineapple juice

  • 2 garlic cloves minced

  • ¼ teaspoon pepper

  • ½ teaspoon salt

  • 1 Tsp of lime zest

  • ½ lime squeezed

  • 1 Tablespoon sesame seeds

  • 1 Tablespoon chapped cilantro

  • 1 Tablespoon flour

  • 1 Tablespoon water

  • 1 red bell pepper cut into 1 inch cubes

  • 1 yellow red bell pepper cut into 1 inch cubes

  • 1 red onion cut into 1 inch slices

  • 1 ½ cups fresh pineapple cut into 1 inch cubes (or pre-cut fresh!)

  • 1 cup of baby bell mushroom caps, remove stems

  • Cilantro for garnish

Directions:

1.    In a small saucepan, whisk together the brown sugar, soy sauce, pineapple juice, garlic, pepper, and salt for 2-3 min on medium. In a small bowl, whisk together the water and flour and slowly whisk into the mixture.

2.   Bring to boil and boil about 1-3 minutes until the mixture just starts to thicken. Remove from heat and add lime juice, zest, sesame seeds and cilantro. Make sure to reserve ¼ cup of the sauce for later.

3.   Marinate the chicken in the sauce in the fridge for at least 30 minutes. Thread the chicken on skewers alternative between mushrooms, peppers, red onion, and pineapple.

4.   Grill for 8-10 minutes until the meat is done to desired liking, typically at 160 degrees. Remove from the grill and sprinkle or baste on the with reserved sauce. Garnish with cilantro, a sprinkle of salt and sesame seeds if desired.
