Grilled Pizza

Directions: 

  1. Cut a large dough into 4 sections, I buy my dough from a local pizza place

  2. Pull the smaller pieces with your hands, don't worry about them coming out in weird shapes, that makes them more fun, but avoid any holes

  3. Place them on a baking sheet, with paper towel in-between each dough

  4. Prep all your toppings and put them in small bowls on one tray next to the grill

  5. Turn the grill on high and place one of the doughs on the grill let it cook till crisp but not burnt and turn over.

  6. Pour a light layer of olive oil over the crust and put the cheese of whatever pizza you are making first so it starts to melt. Then top it with whatever toppings you choose.

  7. Have one side of the grill on high, while the other is on medium, slide the pizza over to the medium side so it can melt/warm the toppings.

  8. Close the top of the grill and let it stay closed for a few minutes while the toppings melt.

  9. Once the bottom is cooked and the toppings are warmed take it off, place on a cutting board and chop it up to share with friends, or serve as individual pizzas!

Yields: 1 whole dough=4 grilled pizzas 

Pizza Flavor Ideas 

1. Grilled Peaches, goat cheese, prosciutto, arugula and balsamic 

  • grill the peaches first and slice before placing on the pizza, top the whole pizza with arugula

2. Caramelized onions, ground turkey, sautéed mushrooms 

  • cook the onions and mushrooms before putting on the crust

3. Chipotle Chicken: grilled chicken breasts, grilled peppers, caramelized onions, mixed shredded cheese and chipotle mayo 

  • grill the peppers on the grill and slice in pieces

4. Margarita: Fresh mozzarella, tomato, pesto, basil leaves
