Baked Apples
Ingredients:
6 medium-large sized apples, preferably green, granny smith apple for baking
1/4 cup of chopped walnuts (medium-fine)
1/3 cup of brown sugar
2 Tbl of Butter
1/3 cup of raisins or currents, either works
1 tsp of cinnamon
**1/4-1/2 cup of apple cider ** optional
Directions:
Preheat oven at 350 degrees
Wash and core the apples, making sure to get out all the center of the apple. Place them evenly in a 9x9 pan keeping them next to each other will help to keep them together.
Alternate adding the sugar, butter, walnuts, and raisins inside the core, packing them in as you go lightly with your finger. Once you have completely finished, and you topped it with brown sugar, sprinkle the cinnamon along the top of each, and if you desire, a pinch of salt, which will cook with the brown sugar to create a caramel topping.
**if you desire a softer apple, with more flavor, add a small layer of apple cider along the bottom of the pan, which the apple will soak up as it bakes, keeping in the moisture.
Bake for 30-40 min in the oven, till the begin the split along the edges and a knife goes clearly into the soft apple. Let stand for 5 min, to "harden" from their softer states and serve warm.
If made ahead of time, under cook them by 5-10 min and place back into the oven before serving.
Best served with VANILLA ICE CREAM! but maybe I'm bias.
