Vanilla Bean Orange Infused French Toast
1 orange
1 loaf of challah bread
1 large vanilla bean
¼ cup of milk
4 eggs ( egg for every two slices, if bread it bigger then normal)
2 Tbl butter
1 tsp cinnamon
1 tsp nutmeg
1 Tbl sugar
As early as possible, even the night before, slice the vanilla bean down the center (not in half, just a line down one side, creating flaps) and put the one vanilla bean in the milk. Let sit for at least an hour or more.
Right before cooking:
Preheat the oven at 175 degrees.
Combine sugar, cinnamon and nutmeg, and set aside. Slice the bread in 8 slices, about an inch thick and set aside as well. In a large bowl crack all the eggs, remove the vanilla bean from the mixture and add in the vanilla milk. Open the cut flaps and scrape out the inside beans with a spoon. Mix this in with the egg mixture along with the sugar mixture. Finally add the zest of one orange and squeeze about 1 Tbl of the juice in.
Set up one bit sautee pan or two smaller ones, and get to medium heat. Slice a bit of the butter and let melt in the pan. Take two of the slices of toast and let them soak in the egg mixture for about half a minute, make sure to coat every side. Place this on the pan and cook till one side is golden crispy, flip the side and cook the same way.
Take out a baking sheet, place tinfoil on it, and put each of the slices on this in the oven to keep warm.
Repeat these steps till you are done with the whole loaf.
Serve with any fresh fruit and maple syrup!
