Candied Cranberries
It's super easy and a great thing to decorate your dessert plates with during the holidays!
Ingredients:
1 cup sugar
2 cups of water
1/2 cup cranberries
Directions:
Cook 1/2 cup sugar and 2 cups of water in medium saucepan over low heat, stirring until sugar dissolves. Transfer to top of double boiler. Add cranberries. Cover berry mixture and place over simmering water. Bring up to heat and stir occasionally, or until the sugar is entirely melted and the mixture is clear.
Add the cranberries to the syrup and let it sit over night. Then strain the cranberries in the morning and coat with a fine sugar. Shake them around until they are completely coated and place the cranberries on a tray and let them dry out for at least an hour.
(Can be prepared 3 days ahead. Cover and refrigerate.)
